Editing files directly on server changes the file to something weird?

Sometimes when I edit files directly on the server, when I save and upload, the file content becomes:

GIF89a

What's up with that? It was just like that recently, and I'm thinking it has something to do with jpgraph that I installed just recently on the same server, because it says 'GIF' and also this problem began occuring after I installed that.

i highly doubt flashfxp is doing that..
look into that addon you installed

What was the original file type? It sounds like it's being replaced by a GIF image file.
